Albanian Venison Stew- Actually there is a great story behind this recipe. We got this from a couple doing church/missionary work, which we met while in Albania. (That's right Albania, not Alabama. Albania is located directly east of Italy across the Adriatic Sea) I don't think there are any deer in Albania, but since we were there when we got this recipe...hence it is named.
1-2 lbs of venison cut into 1 inch cubes
1 can of cream of mushroom condensed soup
1 jar of beef gravy
1 onion diced
1 cup of carrots sliced
1 cup of potato cubed
1 can diced tomato (if desired)
1/3 cup celery
1 tsp salt
1 tsp pepper
1 bay leaf
1 tsp Kitchen bouquet (if desired)
Simply place all ingredients in a crock pot. Do not add any water !!! There is enough moisture in vegetables and meat, although you may not think so. Mix thoroughly, and turn crock pot on to high for 2-3 hours, and then lower heat for another 2 hours or more. Remove bay leaf before serving.
This is a meal which is like lasagna, in that it gets better the 2nd or 3rd day. I usually cook it, let it cool down, refrigerate it, and then serve the next day or so. Great on cold days with corn bread or biscuits.
Note: I only use a cook with a minimal amount of salt, so you will need to taste and salt to your desire. Also you can add other vegetables, spices (Texas Pete or such) to add some UMPH!! if you desire.
